Keynote: Simulating the Drying Process of Soft Cellular Foods
Durée: 23:12
In a keynote presentation from the COMSOL Conference 2018 Lausanne, Thijs Defraeye discusses how multiphysics modeling can provide insight into various convective drying processes for soft cellular materials (like fruits), including solar and electrohydrodynamic drying. Using the COMSOL Multiphysics® software, Defraeye and his team can look into ways to scale the food production processes.
Thijs Defraeye is a senior scientist at the Laboratory for Biomimetic Membranes and Textiles, Swiss Federal Laboratories for Materials Science and Technology (Empa). His focus is on food technology, using computational methods and nondestructive imaging to better understand food dehydration and cooling processes.
