How to set permittivity in the modulated region of a volume holographic grating?

For a volume holographic grating, permittivity in the modulated region is composed of an average dielectric constant and a modulation, which is expressed as
ε(x, z)=ε0+△ε·cos[K(x·sinφ+z·cosφ)].
Does anybody kown how to set this fomulation in the Material interfere?
