Overall heat transfer coefficient

Will anyone tell me, what factors influence the heat transfer coefficient in an oil quenching process?
Details:
Spray quenching and oil bath quenching of a high carbon steel component is to be studied in my case. Apart from the traditional parameters like temperature, material, thermal conductivity, velocity and diameter of jet, what other parameters influence the heat transfer coefficient during
a) the transient heat transfer process involving the steel body at 950°C and an oil bath at 220°C?
b) the transient heat transfer process involving the steel body at 950°C and a water spray assembly?
