How to Quantify Mixing Performance in Microfluidic system

Hello, I have been simulating microfluidic systems in comsol using Laminar flow and Transport of diluted Species physics to quantify the mixing performance for water in that microfluidic device. The results show the velocity, concenration of specie 1, and concentration of specie 2 in 2D, but I don't know to to show the mixing in 2D and quantify it in 1D plot to see the percentage of mixing in that device?

What should I add or use to get these data? Also, if I have a reaction between to species such as oil and alcohol how can I add it?
