Deactivating Liquid Phase

I was trying to model a scenario where a heat source is moving on a boundary, incorpoarting 'Phase change Material'. A part of material is melted and the fraction of liquid phase shall be figured out. However the liquid phase converts back to solid phase due to transient heat loss. Is there any feasible tricks to keep the liquid phase as it is ? How to deactivate the points which crosses the melting point?
