Right-click Materials, select Blank Material. Add the properties of interest from the list under Basic Materials. Finish up by giving the material an informative name. Repeat for your other materials.

Muhammad,
It sounds like you work with geomechanical applications. Please make sure that your license includes the optional Geomechanics Module, as that is the one which includes material laws suitable for that field (Cam-Clay for clays, etc, see https://www.comsol.com/geomechanics-module ), and in particular plasticity with non-associative flow rule. See e.g. https://www.comsol.com/blogs/yield-surfaces-plastic-flow-rules-geomechanics/
If all you want to do is specify a linear elastic small deformation Hooke's law behavior defined entirely by Poisson ratio and Young's Modulus (plus the density in the dynamic case), then no optional product is necessary and you can add those properties as D.W. describes above.
